Real "Ragu alla Bolognese" recipe, with Quorn Mince :)

I usually don't post recipes (and I don't post in English :D) but this is a special occasion!
Before starting I want to thank the Quorn Facebook Page for giving me the chance to share this recipe with all of you who love great food and the Italian cuisine. Hope you enjoy it, Gordon Ramsey surely would ;P
Ragù alla Bolognese with Quorn Mince

My recipe makes 2 servings, so if you want to cook it for more than 2 people just double, triple, etc... it's up to you!

What we need (2 servings):



- 1 medium carrot
- 2 celery coasts
- 1/2 onion (red, golden or white, it doesn't matter)
- 500 ml passata (tomato sauce)
- Quorn Mince (if you have the frozen one, make sure it's properly defrosted)
- Salt to taste (Cornish Sea Salt)
- 5 tablespoons olive oil
- a wooden spoon: cause it makes everything so nice! =)

Procedure:

1. Firstly, we need to prepare the "soffritto", which is a typical Italian mix of finely diced carrots, celery and onions. After peeling the carrots and the onion, take a well sharped knife and start dicing all the veggies. Finally, put them all into a bowl.

2. Add the olive oil in a saucepan and heat it. When it's ready, add the soffritto and let it cook until it softens.


3. After 5/7 minutes add your Quorn Mince and stir well to make sure everything is well mixed up.


4. Once the Quorn is lightly seared (it will take about 5/7 minutes), add the tomato sauce. Don't bin the passata container! Fill it with some warm water, shake it and add it to the ragù. Stir well.


5. Add salt to taste.

6. Cover the saucepan with a lid, reduce heat to low and cook at a simmer, stirring frequently, for about 30 minutes.

[optional: 7. If your ragù is too much dense, dilute it with half glass warm water, stir, then taste it again to get if it's salty enough.]


Once done, boil the pasta (I reccommend spaghetti or tagliatelle, but penne are fine too) and then dress it with your beautiful meat-free ragù!
You can use this "base" also to make some tasty lasagne, cannelloni or, if you want, you can add chilli to prepare the famous "chilli con carne"! 
Eating healthy, tasty and with no animal ingredients is possible!
